Subject: [PATCH] Update README.md (#920)

Fixing help subcommand reference to be `--help`, not `-h`, which does not work:

```
$ trufflehog git -h
trufflehog: error: unknown short flag '-h', try --help
$ trufflehog --version
trufflehog 3.16.4
```
